Rosalie Bay is Dominica’s eco-paradise. Nestled in the hills you will find our one-of-a-kind Distillery producing the finest single cane juice rum, Rosalie Bay Distilling.
Handcrafting just a few thousand bottles annually, each one of our rums is traceable through the production cycle, from the sugar cane farm to the conservation efforts your drink supports.
Rosalie Bay Distilling is produced by fermenting pure cane juice in our modified column-pot still. It has no additives or gimmicks. It is pure, fresh, agricole-style rum aged in ex-bourbon casks.
SUSTAINABILE distilling
Our distillery aims to be carbon-negative, making every sip a net benefit to the world.
Every step of the rum production process is designed to maximize the good we do for the environment. Sure, the revenue generated from our rum protects marine life, but conservation is also woven in every part of our distilling process.
Sugarcane is considered a C4 crop…meaning it’s a net carbon sink. Out of all the species of sugarcane, our cane captures the most CO2.
Bagasse, the remaining pulp after juice is squeezed from the cane, is composted and made into an organic fertilizer. We’re even experimenting to make it into biochar, which sinks carbon for millennia!
The remaining liquid after the distillation is treated on-site, creating irrigation water, which is then used to irrigate crops locally on our conservation center campus.

From field to glass
The talented people of Dominica are growing sugar cane and crafting our rum. The distillery gives community members income and opportunities for long-term employment while building an endowment for Dominica’s oceans.
All our farmers are near the distillery, no one more than one hour away, minimizing the transportation of cane and minimizing CO2 emissions.
Our organic, Caribbean-crafted single rum is produced and shipped sustainably. We can track the sugar cane from field to glass.
Our attention to detail and sustainability is not only important to our craft distillery, but also helps our local island. Staff are all local and bring the spirit of Dominica to every bottle.
