The Lab Annex: A Year in the Making, Built for a Sustainable Future

At Rosalie Bay Distilling, every structure we build is designed with a purpose—and not just for making rum. After a year of planning and construction, our new Lab Annex is finally complete, and it represents something much bigger than just a building.

This isn’t just a storage facility or a workspace. It’s a hurricane-resistant, solar-powered hub for research, conservation, and rum aging, designed to push the boundaries of what a sustainable distillery can be.

Built to Last: Strength, Sustainability, and Solar Power

The Lab Annex was designed by our friend Jeff Torr, who has been our consigliere on all things construction since day one. With his expertise, we created a facility that’s as tough as it is efficient:

• Engineered to Withstand Hurricanes – In a place where storms are a fact of life, this building is designed to take a hit and keep standing.

• Solar-Ready – The annex can support more than 50 solar panels, helping us take another big step toward energy independence.

• Multi-Use, Conservation-Focused – More than just storage, this space will soon house our marine conservation lab, where we’ll cultivate coral, rehabilitate sea turtles, and advance research in ocean sustainability.

From Lab to Barrel Storage: A Space for Innovation & Aging

With the completion of this building, we’re also securing the future of our rum. The annex has the capacity for 160 barrels, allowing us to expand our aging program and craft even more complex, conservation-driven rums.

Each of those barrels represents an investment—not just in the future of Rosalie Bay Distilling, but in our mission to fund long-term conservation efforts. The more rum we produce, the more we can protect sea turtles, restore coral reefs, and support local marine research.

We built this space to last, to innovate, and to give back. Now that it’s finished, we’re one step closer to proving that rum, conservation, and sustainability aren’t just compatible—they’re the future.
